Chef Julien Roucheteau, who arrived from Paris in 2019, cooks with polish and restraint, keeping faith with the house’s heritage while sharpening it with a more contemporary hand. His cuisine is rooted in the South, with Mediterranean tasting menus built around noble fish, vegetables and precise sauces rather than needless theatrics. The setting carries real history: La Réserve began in 1880 as a seafood restaurant, then grew into a Belle Époque address for the Riviera elite in 1905. That continuity is part of the pleasure here. You come for a starred meal, certainly, but also for the sense that craft, service and place have been working together for a very long time.
