Aroma gets plenty of attention for its view, but that would be a lazy reason to go. The real draw is how chef Giuseppe Di Iorio uses that spectacular setting to sharpen, not distract from, the cooking. From the rooftop of Palazzo Manfredi on Via Labicana, with the Colosseum almost absurdly close and the remains of the Ludus Magnus nearby, he builds menus rooted in Roman and Mediterranean tradition, then gives them just enough precision and invention to feel alive rather than dutiful. Michelin notes classic Roman dishes alongside more creative courses, while the restaurant itself emphasizes local producers and seasonal ingredients.  The design helps. Inside, the room is intimate and polished; outside, the terrace does the kind of heavy lifting no decorator can rival, turning dinner into a front row seat to ancient Rome without slipping into kitsch. Aroma also holds one Michelin star, which feels right: this is not cuisine showing off, but cuisine in very sure hands.
