The Chancery Rosewood begins with a building that Londoners already knew how to argue about. On Grosvenor Square, the former U.S. Embassy was designed by Eero Saarinen in the late 1950s and opened in 1960, all limestone grid, large windows and American confidence planted firmly in Mayfair. Saarinen is said to have sketched the idea during his honeymoon, which gives this piece of Cold War architecture a surprisingly romantic footnote. Above it all, the gilded eagle still keeps watch, less diplomatic muscle now than Mayfair theatre. For admirers of David Chipperfield, there is a particular pleasure in seeing what he does here: not a grand gesture, but a controlled rescue act. His redesign does not try to make the building quaint. The monument remains a monument, only better dressed. Inside, Joseph Dirand adds a calm, tactile world of pale stone, warm timber, bronze light and deep, low furniture. The suites feel composed rather than styled to death: generous rooms, creamy bathrooms, soft carpets, proper silence. There is glamour, certainly, but not the kind that grabs your lapels at check in. Food gives the place much of its new personality. Carbone makes its European debut here, Tobi Masa brings omakase precision, Serra adds Mediterranean warmth, and Jacqueline turns pastry into something close to diplomatic protocol, only with prettier boxes. The Eagle Bar is the neatest transformation of all: the old symbol above Grosvenor Square becomes an excuse for cocktails, which feels like progress. Do not come looking for creaking stairs, floral curtains or the cosy eccentricity of an old London townhouse. This is grand, expensive, polished and openly international. But it has what many luxury hotels lack: a real building, a real story, and the good sense not to hide either.
