At Rossellinis in Ravello, dinner begins with the setting: Palazzo Avino, a restored 12th century palazzo high above the Amalfi Coast, where the room carries old world formality without stiffness and the views do a fair share of the talking. The restaurant holds one Michelin star, but what matters more is the kind of precision it rewards. Chef Gianni Vanacore cooks with a clear regional compass, building elegant dishes around Campanian ingredients and seafood, then keeping the flavours light, lucid and disciplined rather than weighed down by luxury for luxury’s sake.  There is craft in everything here, from the pacing of the meal to the hand picked regional wine pairings, and even in the more theatrical touches, such as the Chef’s Table with ceramics made by local artist Lucio Liguori. Rossellinis feels special because it never confuses grandeur with excess.
