Geranium has one of the most unusual addresses in fine dining: the eighth floor of Copenhagen’s Parken stadium. From the dining room, guests look out across Fælledparken and the city’s copper roofs, while inside the mood is calm, light and exacting, with an open kitchen and a wine cellar fully on show. Chef Rasmus Kofoed, who opened Geranium in 2007 and moved it here in 2010 with Søren Ledet, built a restaurant that feels almost architectural in its precision.  What arrives on the plate follows the same logic. Geranium serves a long creative tasting menu centred on seafood from non endangered species, biodynamic vegetables, berries and foraged plants, with meat entirely absent. That choice gives the meal a distinctive clarity and keeps the cooking focused on texture, purity and detail rather than theatrics. It is the sort of place where a view, a plate and a thought seem to have been edited with the same discipline.
