About
El Chiringuito sits on Es Cavallet, where the road slices through the Salinas landscape and the horizon toggles between Formentera and the ramparts of Dalt Vila. The room reads like a refined beach house, whitewashed, timbered, calm, with a boutique and the kind of service that lets you forget your phone exists. In the kitchen, head chef Jérôme Palayer builds a modern Mediterranean menu with Ibicencan, Italian, French, Greek and Lebanese touches, leaning on refined technique and very fresh produce.  A lot of that produce comes from Farm Agricultural Lab in San Miguel, about 12 kilometres away, which explains why the plates feel clean and confident rather than loud. Come hungry for the sea bass baked in a sea salt crust, tuna tartare with ginger and avocado purée, Calamari Andaluz, or the famously unashamed Chiringuito beefburger. The place was created by restaurateurs Olivia Fleury and Jonathan Thorogood, and after 16 seasons it is still tuned to its surroundings with bohemian ease and serious attention to detail.
