At Alte Schönhauser Straße 4, Zeit für Brot captures a very Berlin kind of appetite: quality first, fashion following closely behind. The brand began in Frankfurt in 2009, founded by Björn Schwind, and this Mitte address became the first Berlin branch in 2012 under Dirk Steiger, who helped turn it into one of the city’s benchmark bakeries.  What draws people in is the craft. Everything is baked on site with Bioland ingredients, long fermentation and genuine handwork, with the open bakery giving you a clear view of the process rather than hiding it behind a charming myth. Their signature remains the Hefeschnecke, especially the cinnamon roll, warm, fragrant and rich enough to justify a small detour or a large one. Bread matters just as much here, from house loaves to darker rye based options that have helped build the bakery’s reputation.  The setting plays its part with intelligence. The official images show outdoor seating, a clean sales counter and direct sightlines into the bakery, while Berlin sources describe an interior that feels simple, warm and urban at once. In a part of Mitte full of retail energy and café traffic, Zeit für Brot manages to feel focused. You come for a pastry, then notice that what really lingers is the discipline behind it.
