Cañabota brings serious seafood craft to the center of Seville, on Calle Orfila, where it opened in October 2016. The kitchen is led by Marcos Nieto, with the house built around a clear idea: impeccable fish and shellfish, cooked with restraint and precision so quality stays at the forefront. Sea and embers define the experience, from raw preparations to frying, stewing and grilling, with produce centered on the Andalusian Atlantic coast. The room is one of its strengths: bright, pared back, and shaped by a fishmonger style counter, white tiled surfaces, and an open kitchen that puts the grill work in full view. It feels confident rather than formal, which suits a restaurant devoted to product, technique, and honest flavor.
