The restaurant dates to 1543 and its walls retain neo-Gothic carved wooden panels, faded frescoes, stone staircases worn smooth by time, and majolica stoves that once warmed nobles and merchants. Beneath its historic floors lies the crown jewel: a wine cellar dating to 1280, with over 1,000 curated labels, where private tastings can be arranged by reservation. Chef Michael Meister trained at the legendary Tantris in Munich and returned to Bolzano at 28 to take over the city's oldest inn. The cuisine blends Tyrolean roots with a broader international sensibility, and the degustation menu is considered excellent value. Book the original Neo-Gothic dining room on the ground floor rather than upstairs.
