At The Chairman, Cantonese cooking feels both deeply rooted and quietly sharpened. The restaurant opened in 2009 under owner Danny Yip, with long time head chef Kwok Keung Tung shaping a kitchen that treats ingredient research almost like scholarship. The address today is The Wellington on Wellington Street in Central, where the dining room has a calmer, more polished mood than the original site: leafy plants, art pieces and low light, with none of the visual noise that steals attention from the table. What matters here is precision and confidence. The signature steamed flowery crab with Huadiao wine and chicken fat has become almost mythic, and for good reason, while seasonal vegetables, local seafood and painstaking sauces show how much range can exist inside a cuisine often flattened into clichés. This is the kind of place that makes you rethink what “classic” can mean when the hands in the kitchen are restless, exacting and very sure of themselves.
