Prunier is the sort of Paris address that makes modern openings look terribly impatient. The Prunier name dates back to the late nineteenth century, while its grand Avenue Victor Hugo restaurant opened in 1925. More than a century later, it still knows how to make an entrance. Behind the handsome façade near Place de l’Étoile waits one of the city’s great Art Deco dining rooms: lacquered wood, glowing mosaics, marine details, polished banquettes and the quiet confidence of a room built when Paris expected restaurants to last forever. You do not slide into dinner here. You arrive. Prunier’s true distinction is caviar. Long before it became a universal symbol of expense, this house made it part of its identity. Today it serves its own Prunier caviar, produced in France through the brand’s own expertise and farms. That gives the menu unusual credibility. Here, caviar belongs on the table as naturally as butter in a bakery. The rest follows with classic assurance: oysters, langoustines, sole, smoked salmon, shellfish towers, sharp lemon, cold champagne, attentive service.
