Restaurant 360 turns dinner in Dubrovnik into an act of precision. Chef Marijo Curić, born and raised in the city, builds his cooking on Dalmatian and Dubrovnik flavors, then sharpens them with classical French technique. Michelin also notes Asian touches, from robata grilling to fermentations, which helps explain why the food feels both rooted and exacting rather than merely expensive.  The setting does a lot, but not in a cheap postcard way. The terrace runs along the medieval walls by Fort St. John and looks onto the old port, while inside, historic stone walls meet a restrained contemporary dining room with a view of the glassed in kitchen. You are constantly reminded that craft is the point here, both architectural and culinary.  That location matters. Restaurant 360 sits inside Dubrovnik’s UNESCO listed Old City, a place shaped by centuries of maritime wealth, damage, and restoration. So the meal carries a sense of continuity: old stone, disciplined technique, local ingredients, no theatrics needed. It is the kind of restaurant that makes luxury feel earned, because every detail seems to have been worked on until it could no longer be improved.
