ÄNG feels like the kind of restaurant architects whisper about before dinner even starts. At Ästad Vingård in Halland, the approach matters: a path through meadowland, then a sharply drawn glass house by Norm Architects, with much of the restaurant tucked below ground. The building opened in its current form in 2022 and plays a clever game with transparency above and intimacy below, pairing Japanese influenced restraint with Scandinavian calm through stone, wood, muted textiles and custom Karimoku furnishings.  In the kitchen, Filip Gemzell leads the creative work together with Ann Catrine Gemzell, and the restaurant’s signature lies in a Scandinavian tasting menu built from the local landscape: producers, hunters and fishermen from Halland, plus beverages that range from European wines to bottles from the estate itself and a house made non alcoholic pairing. There is even a tasting breakfast in the glass house, which is either very Swedish confidence or a gentle flex. Either way, it works.  What makes ÄNG memorable is the choreography. Snacks begin upstairs by the chef’s counter, the evening moves through a wine cellar, and the dining room opens with long views over the fields. Michelin’s inspectors currently list ÄNG with one Michelin Star, while Ästad’s own site says the restaurant has held both a Michelin Star and a Green Star since 2021.
