Nomos Ante makes a small ceremony out of dinner, and it starts before you taste a thing. You are guided through Nomos Hotel, housed in a former Franciscan convent in Rome, into a dining room of sharp restraint: bare stone, pale wood, clay toned surfaces, and totem like sculptures that feel like silent witnesses. The staff lean into the setting too, described as moving through the room in monk like robes, turning service into choreography rather than routine.  Chef Giulio Zoli, Roman born and previously sous chef at Il Pagliaccio, cooks with the same sense of structure. His signature is sauce as architecture, building bridges between Italian memory and wider references. One dish might take spaghetti and push it through smoke and citrus, another might land on filled pasta with rabbit, chickpea milk, fermented apricot and sumac. It is precise, modern, and quietly bold, the kind of meal that makes you slow down and pay attention.
