Many restaurants borrow a bit of history. Miil had the advantage of starting with a seven hundred year old mill. The restaurant occupies part of the Kränzelhof estate in Cermes, a village between Merano and Bolzano where vineyards climb the hillsides and palm trees occasionally appear in the landscape, a detail that still catches visitors off guard in the Alps. Long before wine lovers arrived, the estate belonged to the Cistercian monastery of Stams. Today, guests often begin their evening wandering through Kränzelhof's labyrinth gardens, passing contemporary artworks, vines and carefully framed views of the surrounding mountains. The mill itself has been transformed with remarkable restraint. Architect Juri Anton Pobitzer resisted the urge to compete with the building's history. Ancient stone walls remain the protagonists, while contemporary interventions quietly support the scene. A long porphyry counter runs through the space like a geological reminder that South Tyrol has always had excellent taste in stone. The kitchen follows a similarly confident approach. Seasonal ingredients from the region are treated with precision, though never in a way that feels eager to demonstrate technical prowess. The wines travel an even shorter distance. Looking out towards the vineyards while drinking a bottle produced a few hundred metres away introduces a level of traceability that would delight both sommeliers and accountants. What stays with you is the feeling that nothing here was invented for visitors. The mill existed before the restaurant. The vineyards existed before the wine list. The gardens were planted because someone genuinely wanted them. Miil simply happens to sit at the intersection of all three, which is precisely what makes it worth the journey.
