The estate rises around the ruins of a Cistercian abbey founded in 1118, when monks came here seeking silence, labour and spiritual discipline. They chose these wooded valleys deliberately. Today their former refuge welcomes guests for fireside cocktails and long breakfasts, which history may consider a plot twist. The abbey was heavily damaged after the French Revolution, then rescued in the 19th century when wealthy romantics developed an enthusiasm for Gothic ruins. Conveniently, sorrowful stone arches had become fashionable. Instead of rebuilding everything, owners preserved the fragments and turned the domain into a grand country estate. It remains a wise decision. Few backdrops improve so dramatically in evening light or light rain. Now restored as a hotel, Les Vaux de Cernay leans joyfully into character.
