Founded in the early 1990s by artisan gelatiere Alberto Galliera, the shop helped redefine what Italian ice cream could be: intensely flavoured, rigorously seasonal and crafted with a near scientific respect for raw ingredients. Behind the sleek, contemporary counter, small stainless steel tubs reveal flavours that change with the market, from Bronte pistachio and dark gianduia to fragrant sorbets built around ripe local fruit.
