There is a certain audacity to the Jackalope Hotel. Set among the vineyards of Merricks North, it rejects the predictable language of wine country hospitality. No weathered timber, no pastoral nostalgia. Instead, a low black structure cuts through the landscape, its entrance marked by oversized glowing spheres that feel closer to contemporary art than rural Australia. The concept draws from the mythical jackalope, and the hotel commits to it with conviction. Interiors are deliberately dark, almost cinematic. Corridors glow softly, a glass encased wine cellar rises like a stage piece, and the much discussed chandelier of thousands of suspended globes adds a sense of spectacle that borders on the surreal. It is striking, undeniably so. Rooms open wide onto the vineyard through full height glass. Japanese soaking tubs and heated floors bring a tactile comfort that contrasts well with the dramatic common spaces. The infinity pool, aligned with the vines, delivers the moment most guests come for. Yet the experience remains carefully constructed. Jackalope sits on the historic Willow Creek Vineyard, but heritage plays a minor role. The focus is firmly on design and atmosphere. Dining at Doot Doot Doot is refined and visually composed, though occasionally more precise than soulful. You come here for impact. For a strong visual narrative.
