Ember is the kind of Mechelen address you can smell before you see. Step inside and the first thing that hits is wood smoke from a live fire, the restaurant’s signature and a promise the kitchen keeps all night. Chef Zino Jacobs, together with Arthur Doppée, builds a set menu around grilling and smoking with real precision, leaning heavily into vegetables as much as meat and fish, and pushing a clear no waste mindset that feels genuine rather than performative.  The room matches the cooking: dark, atmospheric, confidently styled, with views onto the open kitchen and a steady pulse of slow, warm house music that keeps the tempo lively without turning dinner into theatre. Since moving into a new spot in the city centre in September 2024, Ember feels even more like a destination, not a stopover.  Expect flame kissed depth, bright acidic lift, and pairings that can go fully non alcoholic if you want the focus to stay on the food.
