At Wynn Palace in Cotai, chef Tam Kwok Fung builds the menu around China’s 24 solar terms, so the kitchen follows shifts in climate and produce with almost scholarly precision. The idea sounds ceremonial, but on the plate it lands with clarity and appetite: refined Cantonese cooking driven by seasonality rather than museum glass.  The setting helps. The restaurant sits on the ground floor of Wynn Palace, close to Mizumi and SW Steakhouse, and leans fully into the resort’s floral world. Expect lavish materials, crystal light, silks, lush arrangements and a room that understands the value of a grand entrance. Thankfully, the food keeps up. Tam is one of Macau’s heavyweight Cantonese chefs, and the restaurant has moved fast from newcomer to major address, propelled by technical polish and a menu that keeps changing with the seasons.
