At Central in Barranco, Virgilio Martínez turns dinner into a highly disciplined survey of Peru itself. The restaurant’s defining idea is a “vertical journey” through the country’s ecosystems, so the meal moves by altitude, from Pacific depths to Andean heights and Amazonian terrain, with ingredients researched alongside Mater, the team’s in house research centre led with Malena Martínez and Pía León.  The address matters. Pedro de Osma is one of Barranco’s grand avenues, and since 2018 Central has occupied Casa Tupac, a spacious compound with a garden, research spaces and León’s Kjolle nearby, which gives the whole place the feel of a serious culinary headquarters without losing warmth. The design leans contemporary and restrained, with natural materials and a quiet sense of theatre that leaves the plates to do the talking.  What makes Central so magnetic is that the menu refuses to coast on Peru’s greatest hits. One course may revolve around shrimp, loche squash and avocado from a dry valley, another around pacu, watermelon and coca leaf from Amazonian water. You go for the cooking, of course, but also for the rare pleasure of feeling a country explained with this much ambition, precision and confidence.
