Baumanière

The first thing you notice is the landscape. A wall of pale limestone rises above the trees, crowned by the medieval village of Les Baux de Provence. Then come the gardens, the fountains, the olive trees and the old stone houses scattered across the property. Only gradually do you realise you have arrived at one of France’s most celebrated hotels.

Baumanière was founded in 1945 by Raymond Thuillier, who helped transform this quiet corner of Provence into a destination for gourmands and travellers. By 1954, the restaurant had earned its third Michelin star, long before Provence became fashionable. People travelled here specifically to eat.

What is remarkable today is how little the hotel seems interested in showing off. There is no grand lobby, no architectural statement, no attempt to manufacture glamour. Guests move between former farmhouses and Provençal houses connected by gravel paths and gardens. It feels less like a hotel than a small village that happens to operate at an exceptionally high level.

The rooms follow the same logic. Some are charming, some are elegant, all are comfortable. None are trying to reinvent hospitality. In an era where many luxury hotels compete for attention through increasingly elaborate interiors, Baumanière seems content to let the setting do much of the work.

And what a setting it is. The cliffs of Les Baux dominate every view. The scent of rosemary drifts through the gardens. In the evening, diners gather at L’Oustau de Baumanière while the village above slowly lights up for the night.
